Our Binchotan (White Charcoal) is made using the same techniques and processes that have been used for centuries. In this ancient Japanese method pieces of wood are baked in handbuilt clay kilns, slowly at first and then at extremely high temperatures (approximately 1200ºC) with restricted oxygen. This allows carbon to be captured in the wood, a process called pyrolysis. The combination of pore structure and adsorption forces of reactive carbon results in a natural filter material for water and air.

Binchotan is almost as hard as steel, with the smoothest surface when it’s cut through. If one strikes two pieces together, one hears a clear, metallic sound. It contains a variety of minerals that were absorbed during its life as tree.

Wood Vinegar, also called Pyroligneous acid or Liquid Smoke is produced through the natural action of carbonization. Produced from the process of making binchotan (white charcoal), it is heated in an oxygen-reduced environment which leads to the decomposition of thermal materials and the release of volatile elements. The exhaust smoke from this charcoal production is condensed (cooled) into a liquid – this condensate then further separates into vinegar, bio-oil and tar. Wood vinegar has a low pH (around 3). It has being used extensively in Japan and through out Asia for several decades for all sorts of uses and replacement of synthetic chemicals.

Here are some tips for selecting a good quality binchotan :

  • The cut surface shines like black diamonds.

  • Gives out the least amount of black dust when you touch.

  • Gives out a metallic sound when you hit them.
